Current Menu - Mardi Gras

Wallace State's Culinary Arts program will host is first Wednesday lunch this week with an "Eat Better, Live Better" themed menu. Lunch is served from 11 a.m. to 12:30 p.m. at the Peinhardt Conference Center in the School of Nursing and Center for Sceince. Meals are $5 each and include a drink of tea or water.

Salad: Shrimp Remoulade Vieux Carré

A delicate bed of butter lettuce, layered with flavorful poached shrimp in a spicy remoulade styled dressing and topped with shredded red cabbage, green onions, yellow bell pepper and grape tomatoes (all the colors of Mardi Gras).

Soup: Mardi Gras Gumbo Ya-Ya

A dark and deeply flavored gumbo featuring chicken, Tasso ham and andouille sausage cooked long and slow in the Cajun tradition with onions, peppers, celery and more than a few secret ingredients. Garnished with white rice and served with Creole hush puppies.

Sandwich: Bourbon Street Muffuletta

Our take on the classic sandwich which originated in the famed Central Grocery in New Orleans. We start with a special muffuletta roll (actually baked in New Orleans) and layer it high with deli ham, Genoa salami, capicola and provolone cheese then we smother it with a zesty olive salad, made in house for this awesome sandwich. Served with your choice of chips.

Pasta: Blackened Chicken Jambalaya Pasta

Zesty blackened chicken is quickly sautéed with andouille sausage, garlic, onions and red and green bell peppers. This mixture is finished with a touch of cream and tossed with penne pasta... Garnished with green onions and Parmesan cheese.

Entrée: Shrimp and Crawfish Etouffée

Shrimp and crawfish tails are smothered in a rich sauce of onions, celery, garlic, tomato, bell pepper and Cajun spices with a splash of cream. Served with Stompin’Cheese Grits. Definitely not for the faint of heart.

Combo: Soup, Salad or Sandwich Combo

Can't decide between a soup, salad or sandwich? Let us help with our combo meal! Choose two half items instead. You have a choice of a half sandwich, half salad or half soup.
